Easy Breakfast Recipe ♥

Besides making breadcrumbs from stale bread you can whip up this NO BAKE easy meal in under 15 minutes!

Great for breakfast!

You will need:

1 Zucchini or Courgette (sliced thinly)

A handful of Mushroom of your choice ( I have used Oyster Mushrooms here)

1 Bell Pepper (cut into strips)

3–4 Cloves of garlic (minced finely)

Sausages or Luncheon Meat (optional)

Cheese sliced or grated (Cheddar used here)

How to prepare:

Lightly grease an old cast iron or skillet with butter or olive oil, let it sit on the stove on high heat for 2–3 minutes.

Place the thin slices of zucchini on the fully heated cast iron and once they start to get brown and crispy put them onto a plate and keep aside.

Now do the same with the mushrooms until they turn a golden brown, set aside.

Next throw in the cut sausages and turn up the heat. Let them get charred a bit - smoked and browned, set it aside on a plate.

Set the heat on low and add the minced garlic and butter and cook for 1-2 minutes.

Now place the stale bread slices on top of the garlic butter mix

On top of the bread arrange the browned zucchini, mushrooms, sausages and the bell pepper strips

Sprinkle with salt and pepper or herbs (dried Italian herbs used here)

Throw in the sliced or grated cheddar and cover the cast iron with a lid and cook on low heat until the cheese melts.

DIG IN while it’s warm!
