Maldivian-Inspired Quinoa Salad

 Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 mango, diced
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup cilantro, chopped
- 1/4 cup shredded coconut

Dressing:
- 3 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions:
1. Cook Quinoa: Boil quinoa in water for 15 minutes. Let it cool.
2. Mix Salad: In a large bowl, combine quinoa, mango, cucumber, bell pepper, cilantro, and coconut.
3. Add Dressing: Whisk lime juice, olive oil, salt, and pepper. Pour over salad.
4. Serve: Toss everything together and serve.
